Shamane Simons

A Colorado native, Shamane began her professional career in 1990 as an apprentice and pastry assistant at the prestigious Four Star, Flagstaff House Restaurant in Boulder, Colo. In 1991, she took a position as the Pastry Chef at The Sugarbush Resort in Vermont, and also worked as the Pastry and Line Chef at the Tucker Hill Inn Bed and Breakfast—“those were busy times”!

In 1994, she earned her Culinary Arts, Sciences and Restaurant Management Degree at the renowned Scottsdale Culinary Institute in Arizona. From 1992 to 1996, while earning her degree, she was the Pastry Chef at the Wrigley Mansion Club in Phoenix. The Club was privately owned by music recorder and musician, Geordie Hormel. She had the pleasure of making cakes for exotic celebrities such as Alice Cooper and Nine Inch Nails, along with many a elaborate wedding and private party. Her post-graduate education included culinary classes hosted by the International School of Confectionary Arts, and the Notter School of Pastry Arts.

From 1996 to 1998, she traveled abroad, and resided in Burgundy, France where she worked as a personal chef for an exclusive hot air balloon company. “It was a great time in my life as I traveled throughout France, Italy, the Czech Republic, Austria and Switzerland, preparing five course meals in some of the areas historic castles, vineyards and even ‘in flight’ over the Swiss Alps. Later, I spent many months traveling through Nepal, India and Thailand—an experience which added a broad and diverse spice to my cuisine.”

Returning to the United States in 1998, she assumed the position of Pastry Chef at The Mediterranean and Brasserie Ten Ten restaurants in Boulder, Colorado. In 2004, she opened Shamane’s Bake Shoppe in Boulder, Colorado.
